Pho Vietnam #8 is part of the Pho Vietnam family of restaurants, bringing authentic Vietnamese and Thai flavors to Fireweed Lane in Midtown Anchorage. One of four Pho Vietnam locations serving the greater Anchorage area since 2009, this Fireweed outpost has become a reliable neighborhood favorite built on generous portions, honest flavors, and a genuinely welcoming casual atmosphere.

The pho lineup is the heart of the menu. The combo bowl arrives loaded with brisket, rare steak, and meatballs in a slow-simmered broth that takes the better part of a day to develop its depth. Other pho options include chicken, seafood (shrimp, scallop, calamari), and straightforward beef — all served with the traditional table accompaniments of fresh basil, bean sprouts, lime, and jalapeño.

Thai menu offerings hold their own alongside the Vietnamese classics. Pad Thai is tossed with rice noodles, egg, tofu, bean sprouts, peanuts, and a squeeze of lime. Red Curry simmers in coconut milk. Tom Yum delivers its signature balance of sour, spicy, and savory. Mongolian Beef rounds out the Thai section with sweet-savory depth.

Starters include handmade egg rolls stuffed with ground pork, carrots, taro, jicama, and glass noodles, along with fresh spring rolls packed with herbs and vegetables. Banh mi sandwiches bring Vietnamese street-food energy — crusty bread, layered fillings, pickled daikon, and cilantro. Thai iced tea, sweet and creamy, is the natural pairing for the bolder dishes.
